What is Lecithin
Lecithin was first discovered in egg yolks, hence the name “lecithin” (from the Greek word for egg). It is a phospholipid compound that naturally occurs in plant and animal cells. Lecithin plays an important role in the human body, particularly in maintaining the structure and function of cell membranes, as well as in the transport and metabolism of lipids.
Egg yolk, milk, soybeans, and sunflowers are all rich sources of lecithin, with soybeans and sunflowers being the most common extraction sources. In food production, lecithin is often used as an emulsifier to help blend fats and water, creating smooth and creamy food products while also extending shelf life.
The primary active component of lecithin is phosphatidylcholine (PC), which is a crucial part of cell membranes. Cell membranes are mainly composed of a bilayer of phospholipid molecules that have both hydrophobic and hydrophilic properties, allowing them to form a protective barrier and control the entry and exit of fats and other substances. The phospholipids in lecithin aid in the transport and metabolic cycling of fats and cholesterol in the body. Therefore, lecithin may help stabilize blood lipids, particularly LDL (bad cholesterol) levels, positively affecting cardiovascular health.
Choline, not only a component of phosphatidylcholine, is also a precursor to acetylcholine (Ach), a neurotransmitter that regulates brain activity, including memory and learning.
